It`s Been Awhile!

Hey my Spicy Friends!

So it's been a minute (or 9 years 😂😂)! Last time I was on here, I only had 2 kiddos. My second boy was itty bitty. I now have 3 boys. My first born will be turning 13 tomorrow!! WHAT? I will have a teenager in the house. How did that happen already? My itty bitty second born is now a chatty, super creative 9 year old and the newest addition is my munchkin, sweet 6 year old. Let's just say that I have my hands full. Lol!

I really wanted to jump back into the blogging scene. As you know, we all lived some "interesting" times these past few years, and hopefully we are officially on the other side of it. During the pandemic, even though everybody was home, I was bored. Let's face it, between school zooms and having the kiddos home 24 hrs a day, 7 days a week, it was same thing, day in, day out. BORING! We were stuck at home and I needed something for myself. Something to distract my brain from all that was going on. I needed something FUN!

I decided to become an Epicure ambassador. If you don't know what Epicure is, here it is.

Epicure is a Canadian food company, but also available in the US. Our Mission is Good Food, Real Fast. Our goal is to help families get healthy, gluten free, delicious meals on the table in less than 20 minutes.

My 3 year anniversary is coming up this October and I have been having the best time ever. I have discovered so many new recipes. I have made sooooooo many new friends. I have found a new passion in food, and if I could have my own cooking show like "The Kitche", that would be a dream, Lol!

Looking forward to getting back on here and and sharing some recipes and a little slice of my life :)

Smores Calzones

I had posted a recipe off of pinterest the other day for a smores roll-up. Looked AMAZING! My cousin and I decided to get together to make it. Only, when she went to the store she couldnt find the right dough so she just bought Pillsbury croissant dough. So we proceeded to stuff the croissant dough and bake it. Let me tell you.....they turned out AWESOME! Soooooooooooo Delish! A must try.

Bug Themed Day!

My friend came over a few weeks ago (May 30, 2014) so the kids could have a playdate, and she brought over a few things for the kids to have fun. Everything was bug themed. It was all super cute and the kids loved it.

Baby D's First Spoon

At Baby D's 4 month doctor's appointment, I told the doctor that he was nursing every 2 hours, all day AND night. The Doctor said it was ok for me to start him on a bit of cereal. Yay for me! Its been almost a month now its going very well. I started him on a tablespoon in the morning and now he's eating almost 2 tablespoons morning and evening. A few days day ago, we were out and I forgot to bring his cereal with me. When we got home at 8pm I decided to feed it to him anyways and guess what.....he slept ALLLLLL night!!! Since then, I switched his evening feeding to 8-8:30pm and he sleeps like a little angel all night. So yay for me again! I think soon I'm gonna try veggies or fruits! Stay tuned!

Before the first spoon...

First spoon in....

"This is...."interesting" "

Pretty good stuff!

Happy Baby!

Fed him this for about 5 days and switched to oatmeal which he likes a lot better!

My Birthday Bash

On June 9th, I threw myself a birthday party! Why not right?? All that week I was checking the weather, praying for sunshine. Most of the week, the forecast for Saturday was rain. As we approached Saturday, the odds kept getting worse and worse. Until Friday, all of a sudden my prayers were answered and the forecast was Sunshine and warm! Yay! And that's exactly the weather we had. It was a beautiful sunny day. Not too hot and humid. Just right for a party outdoors. Here's what I served my guests!

Strawberry Peach Sangria! It was sooooo good!

Mini Hot dogs! So cute! (didn't even know they sold mini buns!)

Sliders! (I love mini food)

Anti-pasto skewers

Other foods included: 2 pasta salads, a green salad, potato salad,
veggie w\ dip, chips, Portuguese chicken

Beautiful bouquet of flowers from Hubby! Made the table so colorful!

Bucket of bubbles for the kids! They went FAST!
And for dessert, a veggie plate...

...cake batter rice crispie squares...

...candy...

...more candy...

...a yummy plate with nuts, etc which my uncle brought!

And of course, my annual birthday Strawberry cheesecake (thanks dad!)..

It was a really nice day filled with yummy food, family and fun times! I love parties and party planning. It's a lot of work, but its all worth it when it's all said and done! :o) Thanks to everyone who made my day a special one!

Mother's Day 2012

This past Sunday I hosted a Mother's day brunch. My parents, my inlaws, my grandma, and my brother with his family where invited. We were 10 adults and 3 kids. It turned out to be a really nice day. I was up early preparing all the food. Some I even baked the night before. These events are always a lot of work, but worth it in the end! Here's a little walk-through of the spread I made.

Strawberry and Yogurt Muffins

Healthy Chocolate Muffins (made with oats, greek yogurt and apple sauce)

Oven Fries

A tomato, basil and bocconcini salad. Lots of bacon! (took me 1.5 hours to fry!)

Mini Frittatas (I made in muffin tins)

Raspberries and Black Berries

Strawberries in this cute little pink bucket

A peach nectar Mimosa to start the morning right!

Here's a picture of me and my little man!

And this is what happens after a big day and no nap! Haha So cute!

For dessert we had coffee and Chocolate Mousse that my dad made (I forgot to take a picture). Sooooooo yummy! Oh and with our meal we had homemade bread. Two types: Cinnamon and Raison, and Pecan and Dates. My mom made them and they were to die for! (Also forgot to take a picture). After stuffing our bellies full, we hung out for awhile. Then everyone left but my in-laws and we took the little man to the park to play a bit. We called his friends to joins us. Thats pretty much it for the day. After the park we went home, the inlaws went home and we rested. It was a full busy day. The weather was beautiful and it was nice spending time with the family.

It is a true blessing to be a mother and I wouldn't trade it for anything in the world! I love my little man so much! And I love MY mom with all my heart too! XOX  Hope everyone had a great Mother's Day!

4th Birthday Fun!

This weekend was my nephew's 4th birthday. I invited him to come sleep over at our house on Friday night. He was super excited and so was my little man. A cousin to play with, Yay!!

Watching Kung Fu Panda Saturday morning in our jammies!

My nephew loves pancakes (or pamcakes as he calls them). So everytime he sleeps over, I make a batch for breakfast. Since it was his birthday, I decided to suprise him with rainbow pancakes. It was the first time I attempted them and I think they turned out pretty nice. My nephew loved them. We even put sprinkles on them and a candle to sing happy birthday.

Rainbow pancakes before sprinkles etc.

The birthday boy!

Blowing out the candles!

Here is my nephew and little man playing on the mattress in the living room after breakfast. My nephew was chasing him with the frog and saying that Baby was a fly and he had to eat him. I guess he caught him! Too funny!

After breakfast and a bit of playtime, we headed off the toy store to get my nephew a birthday gift. He ended up with a play BBQ, some play food and a new pair of Spiderman running shoes. Pretty good! When we got home it was still a little bit early to eat lunch, so we headed off to the park. We met some friends there and the kids had a blast. Then it was lunchtime. My nephew and son are quite the picky eaters. I made a fun lunch in hopes that they would think it was cute and would eat. I was right. My nephew ate everything. My son...not so much. I think he's still a little to young to understand a fun lunch. I made grilled cheese cut into penguins with cheese eyes, octopus hot dogs with cheese eyes and mouth, with a side of the oh so famous fishies. My first attempt at a fun meal. Hopefully I can get some more inspiration and get really creative. Well, my first attempt was pretty successful. Bellies were full and it was time for a nap before my nephew's birthday party.

Looks yummy to me!
After naptime we all got ready and went over to my brother's house for the party. It was a great party full of family, friends, food and presents! The cake was amazing and delicious. My parents made it of course!

Power Rangers cakes my parents made for the party!

My nephew with his cousin and friend, ready to blow out his candles (again!).
While everyone was having fun, this was my little man most of the evening. No idea what got into him, but he was not a happy camper most of the party!

So thats it! That's what went on this weekend. It was fun, but now i'm exhausted!

Happy Birthday to my nephew! May you have many, many more and may each one be happier than the last! Auntie loves you very much!
